(2) Inoculation and fermentation: The yeasts used in fermentation include wine yeast, tip yeast and brewer's yeast, as well as Candida medium sized, Todosaccharomyces cerevisiae, etc. After these yeasts are expanded and cultivated, the amount of 1%-3% is added to the fruit juice, and after 2-3d fermentation at 20-30°C, the fermentation filtrate is obtained by filtration. The residue that does not pass through the filter contains yeast, which can be used as the strain for the next fermentation.
