There is also a direct purchase of concentrated juice to prepare beverages. The latter is currently the most. Because starting from the original fruit requires more investment, and if the original fruit is not grown by yourself, the price and quality of the original fruit cannot be controlled by yourself.
Juice production line has water treatment equipment, deployment filtration and sterilization equipment, cleaning equipment, beverage filling machine, secondary sterilization machine, labeling machine, packaging machine, etc. It also needs boilers, air compressors, connecting pipes, etc. Of course, according to the different packaging containers of beverages, some equipments are also different, such as plastic bottles, cans, glass bottles, carton packaging, etc.
①Material selection Choose ripe fresh fruits with less acid for juice fermentation, such as bananas, ripe persimmons, dates, pears, lychees, etc. For fruits with high acidity, such as citrus, grapes, apricots, peaches, cherries, apples, etc., the method of reducing acidity of juice should be adopted. Overcome the high acid content of fruit juice and inhibit the growth and reproduction of lactic acid bacteria.
②Juice production: the same as yeast fermentation juice beverage production.
③ Juice adjustment: When the PH of the prepared juice is less than 4.5, diatomite (granular) or polyamide resin can be added to absorb 3% of the juice amount to reduce acid, stir at room temperature for 20 minutes, and filter after standing for 40 minutes. If the filtrate is cloudy, it can be left to filter until the juice is clear. Add sugar or glucose and 3% lactose to the juice, adjust the soluble solids to 8%-10%, to ensure that the lactic acid bacteria can fully ferment in the juice.
④ Juice sterilization: The filtered juice is heated to 90-95℃ by a heat exchanger for instant sterilization, and then cooled to about 30-35℃ by a heat exchanger for use.
